Delicious Crown Maple maple syrup is made at Madava Farms, a property spanning more than 300 hectares in the picturesque Hudson Valley in New York State. Until the outbreak of the American Civil War, the land was still used for farming; after it was abandoned, countless maple trees began to grow there. Former banker and Crown Maple founder Rob Turner acquired the property in 2007 as a vacation retreat for himself and his wife. He learned from his new neighbors that around 20,000 maple trees grew on his newly acquired land and promptly decided to get into maple syrup production. The first batch was produced in 2011, and today, just a few years later, Crown Maple syrup is considered perhaps the highest-quality maple syrup in the world.
In the process known as reverse osmosis, a special patented method used to make Crown Maple syrup, around 80% of the water is removed from the maple sap and impurities are filtered out. Incidentally, the harvest time determines whether maple syrup is light or dark. The later it is harvested, the darker the color and the stronger the flavor. Crown Maple syrup is used in numerous Michelin-starred restaurants in New York.
Crown Maple Very Dark is certainly the most complex and aromatic syrup of the three classic varieties. An intense molasses flavor, aromas of crème brûlée, espresso, and cocoa beans, and notes of cloves, allspice, and anise, combined with a full maple flavor, make Very Dark a syrup with an intense flavor profile. Use it to sweeten hot drinks such as coffee, tea, or hot chocolate, add a finishing touch to sauces and glazes, or sweeten muesli and oatmeal. It is also ideal for cocktails made with smoky spirits.
