On the Madava Farms, a 300-acre site in New York State's scenic Hudson Valley, will be the delicious Crown Maple Maple Syrup manufactured. Until the outbreak of the American Civil War, the area was still used for agriculture; Afterwards, when it lay fallow, countless maple trees began to grow on it. The former banker and founder of Crown Maple Rob Turner acquired the area in 2007 for himself and his wife for vacation purposes. He learned from his new neighbors that there were around 20,000 maple trees on his newly acquired property and quickly decided to start producing maple syrup. The first batch was produced in 2011 and today, just a few years later, Crown Maple maple syrup is considered to be the highest quality in the world.
In so-called reverse osmosis, a special, patented process for producing Crown Maple maple syrup, around 80% of the water content is removed from the maple sap and impurities are filtered out. By the way, it depends on the time of harvest whether maple syrup is light or dark. The later harvested, the darker the color and stronger the taste. Crown Maple maple syrup is used in numerous New York star restaurants.
The Crown Maple Very Dark is certainly the most complex and aromatic syrup of the three classic varieties. An intense molasses taste, aromas of crème bruleè, espresso and cocoa beans as well as notes of cloves, allspice and anise combined with a full maple aroma make the Very Dark a syrup with an intense taste or effect. Use it to sweeten hot drinks such as coffee, tea or chocolate, refine sauces and icings, or sweeten mueslis and oat flakes. Also ideal for cocktails with spirits with a smoky character.
